That’s Bananas
Did you know that bananas are a great source of potassium and fiber?
Potassium is a mineral that’s important for maintaining healthy blood pressure, reducing your risk of heart disease. And, with 3 grams of fiber, a banana is also a great snack for supporting healthy digestion. The green, unripe ones contain a type of fiber called “resistant starch,” which becomes food for the good bacteria in your gut.
As if those impressive benefits were not enough, bananas can even help fight depression. It's true! Bananas contain tryptophan which helps your body produce serotonin, one of your happy brain chemicals!
So, get happy and try one of my favorite easy banana treats!
Banana Breakfast Cookies
Makes 12 to 16 cookies
What to Have on Hand:
2 bananas, mashed
2 cups gluten free rolled oats
1/2 cup chocolate chips
1/4 cup chopped walnuts, pumpkin or sunflower seeds or nut butter
What to Do:
1.Blend one cup of the oats in a nutri bullet or food processor.
2. Add all oats and mashed bananas to a bowl along with chocolate chips and walnuts or sunflower seeds
3. Heat oven to 350 degrees and line a baking sheet with parchment paper
4. Roll each cookie into a ball and shape into a circular cookie shape (these cookies do not spread out when baking)
Bake about 10 minutes.
