Grab and Go Breakfast-Overnight Oats

Oats are superfood in my book! They contain a type of soluble fiber called beta-glucan which has been shown to reduce LDL (bad) cholesterol, balance blood sugar levels and promote the growth of good bacteria in the gut. 

This is great news if you are interested in how to use food to relieve digestive disturbances like constipation, reduce cholesterol (and your risk of heart disease), maintain healthy blood sugar levels or improve your immune function.

It’s also an easy and delicious snack or meal when you just don’t have time or energy to prepare something complicated. My daughter has Cystic Fibrosis and this is not only quick and easy for her to put together, but she can make several at a time and be set for a week of healthy “grab and go” breakfasts.

A balanced and healthy breakfast sets you up with great energy for the day ahead!

Ingredients

1 cup almond or coconut milk (unsweetened)

1/2 mashed banana

1/2 cup gluten free rolled oats (not quick or instant oats)]

1 T ground flax seeds

1 T ground chia seeds

1/2 tsp ground cinnamon

1/2 tsp vanilla extract

5 drops stevia extract (or 1 tsp Grade A or B maple syrup)


Mash the banana in your favorite cereal bowl. Add milk and remaining ingredients and stir together with a fork. Cover and refrigerate overnight.  In the morning, add your favorite toppings like berries, plain greek or coconut yogurt, chopped walnuts, or coconut.
