Pumpkin Pie“Fat Bombs”

What’s a “fat bomb?’ It’s a snack that starts with healthy fats like nut butter or coconut oil and mixes in other goodies to make a treat that will provide significant calories, but won’t lead to spikes in blood sugar. If you have CF and you’re looking for an easy snack, one of these gives you almost 20 grams of fat and 200 calories.

Ingredients (for 12 fat bombs)

1/4 cup coconut oil

1 cup coconut butter

1 tsp vanilla extract

1 tsp pumpkin pie spice

1/4 tsp stevia powder or 6 drops liquid stevia

Directions:

In a small saucepan, melt the coconut oil and coconut butter. Remove from heat and stir in remaining ingredients. Pour into mini muffin tray and refrigerate at least one hour until set.
