Alkaline Recipe:“Zoodles” with Avocado Sauce

Earlier this week, I posted all about the benefits of adding more alkaline foods to your CF diet. Today, I want to share what that could look like in real life with this delicious recipe.

Zucchini, basil. tomatoes, and most veggies, are considered alkaline along with avocado, lemon and pumpkin seeds.

Well, you have all of these foods in this recipe. It’s easy to prepare and, if you don’t have a spiralizer, many stores have the zucchini already spiralized into “noodles.” That saves time and will allow you to have this lunch or dinner made in no time!

For more calories, mix half zucchini noodles with half brown rice spaghetti or use all spaghetti if you prefer.

Here’s the recipe:

Zoodles with Avocado Sauce

What You Need:

4 large zucchini, spiraled

1 cup fresh Basil leaves

1 ripe avocado

1/4 cup extra virgin olive oil

1/4 cup pumpkin seeds

1 Tbsp nutritional yeast (if vegan) or parmesan cheese

2 Tbsp fresh lemon juice

1/2 tsp salt

3 Tbsp water

1 cup grape tomatoes, halved

How To:

Combine basil, avocado, olive oil, pumpkin seeds, nutritional yeast, lemon juice and salt in a food processor. Blend and add water a tablespoon at a time until smooth.

Combine with zoodles and tomatoes and toss to coat well.

Top with extra pumpkin seeds and chopped basil if desired.
