Garlic and Mushroom Quinoa
Mushrooms are definitely a powerful superfood and this recipe is a winner. You get all the benefits of mushrooms, plus some plant-based protein from the quinoa. If you’re looking to add more protein and calories, spoon the garlic and mushroom quinoa into bowls and top with grilled or roasted chicken, salmon, or a grass-fed burger.
Ingredients:
2 cups water
1 cup uncooked quinoa, rinsed
1 Tbsp extra-virgin olive oil
2 cups mushrooms, thinly sliced (cremini, shiitake, button or a mix)
2 garlic cloves, minced
Salt and pepper to taste
How To:
Combine quinoa and water in a medium saucepan. Bring water to a boil, then reduce heat, cover and simmer about 15 minutes. Fluff quinoa with a fork.
As quinoa is cooking, heat olive oil in a larger saucepan, add garlic and saute one minute. Add mushrooms and saute until soft, about 5 minutes.
Combine mushroom mixture with quinoa and add salt and pepper to taste.
