Blueberry Almond Butter “Fluff”

If you’re living with CF and you’re trying to gain weight, and you read the good news about blueberries in my last post, this recipe is for you!

It includes blueberries to support a healthy heart and lungs, as well as full-fat coconut milk and almond butter for some healthy fat.

Simple and delicious!

Blueberry Almond Butter “Fluff”

Serves 3

1 cup canned full-fat coconut milk (refrigerate overnight)

2 Tbsp almond butter

2 Tbsp real maple syrup

3/4 cup fresh or frozen blueberries

After refrigerating overnight, measure one cup of the thick coconut cream from the can into a mixing bowl (reserve the liquid for another use like as the base for a smoothie)

Add almond butter and maple syrup and use a hand mixer to whip the mixture until fluffy

Divide into 3 bowls and top each serving with 1/4 cup blueberries.

You can also make the three servings and store the remaining two in the fridge for another day’s snack.
