Simple Family Dinner- One Pot Taco Pasta

One Pot Pasta

In my last post, I told you all about the importance of family meals for healthy growth and development. Today, I want to show you how easy it can be to put together a healthy meal your family can enjoy together.

This One Pot Taco Pasta is a winner with kids and adults alike. Try adding it to your routine this week and enjoy some quality family time.

One Pot Taco Pasta (Serves 6)

Ingredients:

1 pound lean ground beef

1 Tbsp extra-virgin olive oil

4 scallions, chopped finely

2 cloves garlic, minced

1 tsp chili powder

1 tsp ground cumin

1/2 tsp sea salt

1 cup grape tomatoes, cut in quarters

1 can black beans, drained and rinsed

1/2 cup frozen organic corn, defrosted

1 organic red pepper, finely diced

3 cups vegetable or chicken broth

1 cup salsa

2 cups brown rice pasta shells (or other uncooked pasta)

Putting it All Together:

1. Heat olive oil in a large saucepan and add beef. Cook until meat is no longer pink, breaking it up with a spoon as it cooks. Drain any excess liquid

2. Add scallions and garlic to the pot and cook together about 5 minutes.

3. Add spices, salt, tomatoes, beans, corn, and peppers and cook another few minutes over medium heat, stirring to combine ingredients.

4. Stir in pasta, salsa and broth and bring to a boil. Cover, reduce heat and cook about 12 to 15 minutes until pasta is done (stir frequently to prevent pasta from sticking to pot)

Top with sliced avocado for extra healthy fat (and calories if you need more!)
