Chickpea Pasta with Cherry Tomato Sauce
I love this recipe because it includes high protein and high fiber chick pea pasta, it takes about 10 minutes to make and it happens to be so delicious, you could serve it to guests and make a great impression
Ingredients:
8 oz chickpea pasta ( I use Banza brand available at Whole Foods)
1/4 cup extra virgin olive oil
3 cups organic cherry tomatoes
2 cloves garlic, minced
sea salt and pepper to taste
1 cup fresh Basil leaves, chopped
1-2 T nutritional yeast
Directions:
1. Cook pasta according to package directions. Drain and rinse under cool water.
2. In a large saucepan, heat olive oil over medium heat. Add tomatoes, garlic, salt and pepper. Stir occasionally until tomatoes burst and release their juices, about 15-20 minutes ( I like to poke each tomato with a fork as they soften to get them to burst)
3. Toss cooked pasta with tomato sauce and fresh basil. Top with nutritional yeast.
Note: If you can't find chickpea pasta, try lentil or black bean pasta. If you can only find brown rice pasta, consider adding chicken, chickpeas or hemp seeds for a protein boost
