Veggie Detox Soup

I am loving this easy vegan detoxifying soup for cold winter nights.  You can switch up the veggies to ones you prefer or have on hand. 

Ingredients:

2 onions, diced

1 red or yellow pepper, chopped into small chunks

2 cups broccoli florets, cut into small pieces

3 organic celery stalks, chopped

3 organic carrots, chopped

1/2 pound butternut squash cubes (you can buy it already cut into chunks to save time)

1 cup grape tomatoes, halved

8 cups water

4 T Bragg's Liquid Aminos or gluten free Tamari

4 drops doTERRA Ginger essential oil (or 1 tsp ginger powder)

2 tsp garlic powder

3 tsp herbs de Provence

2 T nutritional yeast 

Simply place all veggies in a large pot with water and spices (except nutritional yeast)

Bring to a boil, then lower heat, cover and cook for about 20 minutes until veggies are cooked through.  Season with nutritional yeast and a squeeze of lemon juice if desired.
