Summer Pitaya Bowl

Pitaya, also known as dragon fruit, is rich in fiber, antioxidants, Vitamins A and C and minerals like iron, magnesium and calcium.  There are so many benefits to including this superfurit in your diet, from boosting your immune system to supporting gut, eye, brain and bone health!  You can find frozen Pitaya smoothie packets in healthy grocers like Whole Foods or Sprouts.  Try this smoothie bowl for a yummy breakfast or snack.  

Ingredients

1 frozen banana, cut into chunks

1 cup frozen Pitaya (dragon fruit)

1 cup frozen mango chunks or frozen berries (your choice)

1/4 cup canned coconut milk (full fat is best)

1/4 cup plain organic Greek yogurt or 1 scoop of vegan protein powder (optional)

Toppings:

granola

shredded coconut

chopped nuts or seeds (pecans, walnuts, hemp, flax or pumpkin seeds)

nut butter

cacao nibs

berries or sliced kiwi
