Detox Chopped Salad

In today’s world, our bodies are overburdened by chemicals and toxins. There are tens of thousands of chemicals in the foods we eat, the products we use to clean our homes, our personal care products, medications and the air we breathe. How much toxic exposure you avoid, as well as how well your body manages and removes the toxins will dictate the state of your health,

If you are someone taking medication for Cystic Fibrosis, like my daughter, or for conditions like high blood pressure, cholesterol or anything else, you want to make sure you take some action to reduce your exposure and to help your body handle the burden.

One positive thing you can do to is to make sure you get in lots of organic fresh veggies, fruits and whole grains to support the body in reducing your "toxic load."  This detox salad is rich in vitamins, minerals, antioxidants, healthy fats and fiber that will keep you feeling full and satisfied, while taming inflammation and supporting the body in detoxification. 

Ingredients:

6 cups organic kale, removed from stems and chopped 

3-4  cups of shredded red or white cabbage and carrots (Trader Joe's has a pre-made blend)

3 cups lightly steamed organic broccoli, finely chopped

1 cup pomegranate seeds

1 avocado, diced in cubes

1/2 cup organic sunflower or pumpkin seeds

Dressing:

1/3 cup extra virgin olive oil

1/4 cup apple cider vinegar

juice from one lemon

1 T Dijon mustard

1 tsp honey

2 T chia seeds

salt and pepper to taste

Combine all vegetables in a large salad bowl. 

Combine dressing ingredients and whisk in chia seeds, salt and pepper.

For each 3 cup serving, top with 3 T dressing, 2 T pomegranate seeds, 2 Tablespoons of sunflower seeds  and a few cubes of avocado.
