Carrot Ginger Soup

Now that the outside temperatures are going down, our bodies start to crave warming foods like soup. Soup is so easy to make and a huge pot will feed you lunches or dinners for a week! It’s also a great way to upgrade your nutrition by getting in a variety of nutritious & colorful veggies and spices. Carrots, and all orange veggies and fruits, contain nutrients like beta-carotene and Vitamin C to boost immunity and support healthy eyesight Another phytonutrient, hesperidin, helps to increase blood flow, and we know that better blood flow means reduced risk of heart disease. Meanwhile, the ginger in this soup has amazing health benefits as well. This powerful spice has antiviral properties, helps to control nausea, prevent gastrointestinal cancers, and reduce blood pressure. Bioactive compounds in ginger have also been found to have an anti-inflammatory effect in the body making it a “must have” food in the fight against every disease, from Alzheimer’s to Cystic Fibrosis.

Ingredients

1 T olive oil or grapeseed oil 

1 onion, chopped

3 to 5 drops doTERRA Ginger essential oil (or 1 inch piece of ginger, minced)

6 large carrots, peeled and diced (about 5 or 6 cups)

4 cups vegetable broth

1 tsp Himalayan pink salt

1/2 tsp black pepper

1 can full fat coconut milk

juice of 1 lime

1. Heat oil in large pot and saute onion over medium heat for 5-6 minutes. 

2. Add Ginger oil, carrots, broth, salt, & pepper and stir to combine. 

3. Simmer over medium heat for 20-30 minutes until carrots soften

4.Transfer soup in small batches to a blender and puree until smooth  or blend until smooth using an immersion blender.

5. Just before serving, stir in coconut milk and lime juice
