Warm Winter Smoothie
A smoothie in the winter? You may think it sounds crazy, but smoothies are a great way to get a lot of nutrients in one glass, so you don't have to give them up completely just because it's cold outside! With the right ingredients and the right temperature, you can have a cozy, nutritious and delicious drink to start your day. This one has sweet potatoes, a great source of fiber, magnesium, beta carotene and potassium. So enjoy a warm smoothie today!
Ingredients
1 1/2 cups sweet potato, cut in half inch cubes and steamed
1 cup unsweetened almond or coconut milk
1 inch piece of ginger, peeled and chopped
1 tsp ground cinnamon
pinch of cardamom
pinch of turmeric
1/2 tsp vanilla
1-2 tsp honey to taste
Instructions
1. Place sweet potatoes in a steamer basket over a pot of boiling water. Cover and steam approximately 10-15 minutes.
2. Warm the coconut milk in a small saucepan for a few minutes
3. Add milk, sweet potatoes and remaining ingredients to blender and blend a couple of minutes until smooth. Top with a sprinkle of cinnamon if you like.
